Mom’s Apple Pie

This apple pie is great – every time I make it, it gets rave reviews. The ingredients:

  • Pillsbury refrigerated pie crust
  • Sugar, ¾ cup
  • Flour, 2 tablespoons
  • Sour cream, 1 cup
  • Vanilla, ½ tsp
  • Apples, 3-4 cups
  • 1 egg (well-beaten)

And for the topping:

  • Sugar, 1/3 cup
  • Flour, 1/3 cup
  • Cinnamon, 1 tsp
  • Butter, cold, ¼ cup

First, place the pie crust, and then flute the edges, like so:

The next step is to combine the sugar and flour.

And then mix in the egg, vanilla, and sour cream.

Bake for 15 minutes at 425 degrees, and then reduce heat to 350 degrees and bake for 30 minutes more.

Meanwhile, make the topping: blend the topping ingredients until crumbles are formed. Then sprinkle these on top of the pie and bake for another 15 minutes.

Delicious Ginger Snap Cookies

These came out incredibly. The ingredients:

  • Flour, all-purpose, 2 cups
  • Baking soda, 2 teaspoons
  • Ground ginger, 1 teaspoon
  • Ground cinnamon, 1 teaspoon
  • Cinnamon sugar, 1/3 cup
  • Sugar, 1 cup
  • Salt, 1/2 teaspoon
  • Dark molasses, 1/4 cup
  • Butter, 3/4 cup
  • Egg, 1

In case you’re wondering, cinnamon sugar is awesome, and you can make it yourself, as I did.

First, pre-heat the oven to 350 degrees. Then, sift a few of the ingredients together into a mixing bowl: the flour, ginger, salt, and cinnamon. Then sift again into another bowl, to ensure an even mixture, and because you deserve the sifting-punishment.

Next, put the butter in a bowl and beat until creamy.

At that point, gradually beat in the white sugar. Then the egg, and dark molasses. And then, the crème de la crème: the opposite of cream, the flour mixture. Sift in a third of it at first, blend thoroughly, then sift in the rest.

Mix together until a doughy softness forms. Pinch off small amounts and roll into 1-inch diameter balls; then roll those balls in the cinnamon sugar.

Place these on a baking sheet (ungreased) and bake for about 10 minutes.

Fried Mushrooms

These were the star of our ill-fated election-night party, and a bright spot in an otherwise dismal night. The recipe comes courtesy of my mom, and beware – it is time-consuming to make. But also, so so delicious.

The ingredients are:

  • Mushrooms
  • Panko or bread crumbs
  • Eggs
  • Flour
  • Salt
  • Black Pepper
  • Mrs. Dash seasoning
  • Water
  • Grated Parmesan Cheese
  • Canola Oil

The first step is to wash and cut up the mushrooms into bite-sized portions. Then, prepare three bowls.

In the first bowl, have flour (as well as a touch of pepper and salt, but not too much)

In the second bowl, have beaten eggs and water. For every two eggs that you add, add 1 tablespoon of water. As you can see, I used a tall glass instead, as it’s easier to dunk the mushrooms in (I use a fork to do so).

Finally, have flour, Panko or bread crumbs, salt, pepper, Parmesan cheese, and Mrs. Dash in the final bowl. The proportions will vary depending on how you prefer your mushrooms, but the main ingredient should be the Panko.

Dip each mushroom piece into each bowl consecutively, making sure to coat them well each time. Then, deep fry the mushrooms until they turn brown. As you can see, I used an enameled pot, but whatever device works for you.

When they’re done, place on a plate with paper towals to absorb the excess grease, and sprinkle with salt (if you prefer) to eat with ranch dressing.

Portobello Appetizer

This recipe is simple, delicious, and easy to make. This is the (very short) list of ingredients:

  • Portobello mushrooms
  • Olive Oil
  • Red Pepper flakes
  • Gorgonzola cheese, preferably crumbly (but blue cheese works too)

The ingredients.

First, clean the portobello caps, and cut down any stem that might make them difficult to fry on both sides. Then make sure they’re dry.

Next, coat the bottom of your pan (preferably cast iron) with olive oil.

Fry the caps – gill sides down – on low heat for a while. You want to cook them thoroughly, but without burning or searing them.

When you’re ready, flip the caps. Now they can cook gill side up for a while. And the gill side is now hot enough to help melt the cheese you’re going to crumble over them. Add as much cheese as you care to. Then add some red pepper flakes too – again, to taste.

Cook for a while, until you think they’re ready, or the cheese is melted. Cut into quadrants and enjoy!
